Ingredients
Salmon fillets (skin-on)
Olive oil
Fresh garlic (minced)
Smoked paprika
Brown sugar
Lemon zest
Dried thyme
Dried parsley

Instructions
- Preheat grill to medium-high (about 400°F). Clean and oil the grates.
- Pat salmon fillets dry with paper towels.
- Mix olive oil, garlic, paprika, brown sugar, lemon zest, thyme, parsley, salt, pepper, and red pepper flakes in a bowl to form a paste.
- Rub seasoning paste over the salmon fillets generously.
- Let the fillets rest for 10–15 minutes.
- Grill salmon skin-side down for 5–7 minutes. Flip and grill the other side for 2–3 minutes.
- Remove from grill and rest briefly before serving.
