Ingredients

Salmon fillets (skin-on)

Olive oil

Fresh garlic (minced)

Smoked paprika

Brown sugar

Lemon zest

Dried thyme

Dried parsley

Salt

Freshly cracked black pepper

Optional: crushed red pepper flakes


Instructions

  1. Preheat grill to medium-high (about 400°F). Clean and oil the grates.
  2. Pat salmon fillets dry with paper towels.
  3. Mix olive oil, garlic, paprika, brown sugar, lemon zest, thyme, parsley, salt, pepper, and red pepper flakes in a bowl to form a paste.
  4. Rub seasoning paste over the salmon fillets generously.
  5. Let the fillets rest for 10–15 minutes.
  6. Grill salmon skin-side down for 5–7 minutes. Flip and grill the other side for 2–3 minutes.
  7. Remove from grill and rest briefly before serving.
