Description

A refreshing, zesty dessert with a buttery puff pastry base and a luscious layer of Italian lemon spread. Lightly dusted with powdered sugar and optionally garnished with fresh mint, this treat is perfect for any occasion that calls for a touch of sunshine.


Ingredients

1 sheet puff pastry, thawed

1 cup Italian lemon spread or lemon curd

Powdered sugar, for dusting

Fresh mint leaves, for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and place on a parchment-lined baking sheet.
  2. Prick the pastry all over with a fork to prevent over-puffing.
  3. Bake for 15–20 minutes, or until golden and crisp. Let cool completely.
  4. Spread the Italian lemon spread evenly over the cooled pastry.
  5. Dust with powdered sugar and garnish with fresh mint if desired.
  6. Slice into squares and serve chilled or at room temperature.
