Ingredients
1 sheet puff pastry, thawed
1 cup Italian lemon spread or lemon curd
Powdered sugar, for dusting
Fresh mint leaves, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and place on a parchment-lined baking sheet.
- Prick the pastry all over with a fork to prevent over-puffing.
- Bake for 15–20 minutes, or until golden and crisp. Let cool completely.
- Spread the Italian lemon spread evenly over the cooled pastry.
- Dust with powdered sugar and garnish with fresh mint if desired.
- Slice into squares and serve chilled or at room temperature.
