8 rib lamb chops

6 cloves garlic, minced

4 tablespoons unsalted butter

1/2 teaspoon black pepper

1 lemon, cut into wedges


Instructions

  1. 1. Let the lamb chops sit at room temperature for 20–30 minutes to ensure even cooking.
  2. Pat chops dry with paper towels.
  3. Season both sides with salt, pepper, and optional red pepper flakes.
  4. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
