Ingredients

2 cups shredded leftover chicken

1 cup sautéed mushrooms (cremini or button), sliced

0.5 cup shredded mozzarella cheese

0.25 cup crumbled blue cheese (optional)

2 tablespoons chopped fresh parsley

Salt and pepper to taste

4 large cooked lasagna noodles or thin fresh pasta sheets

2 tablespoons olive oil or melted butter

Extra sautéed mushrooms

Additional blue cheese crumbles (optional)

Fresh parsley

Steamed broccoli with lemon

Cherry tomato salad with balsamic vinaigrette


Instructions

1. Cook the lasagna noodles according to package instructions. Lay flat to prevent sticking.

2. In a large bowl, mix shredded chicken, mushrooms, mozzarella, blue cheese (optional), parsley, salt, and pepper.

3. Spoon the mixture onto each noodle sheet and roll tightly like a burrito.

4. Preheat oven to 375°F (190°C). Place rolls seam-side down in a baking dish. Drizzle with olive oil or butter.

5. Cover with foil and bake for 15–20 minutes until heated through and cheese is melted.

6. Top with extra mushrooms, more blue cheese (if desired), and fresh parsley.

Notes

If your chicken is dry, add a spoonful of broth or sour cream to moisten the filling.
