Ingredients
500 g chicken breast
2 tablespoons Cajun seasoning
2 tablespoons fresh lemon juice
3 tablespoons butter (divided)
3 cloves garlic minced
1 cup heavy cream
1 cup Parmesan cheese grated
3 tablespoons fresh parsley chopped
300 g rotini pasta
1 tablespoon olive oil
Salt to taste
Black pepper to taste
Instructions
1. Cut chicken breast into bite-sized cubes. Toss with Cajun seasoning, olive oil, and lemon juice.
2. Heat a large skillet over medium-high heat. Add 1 tablespoon butter and sear chicken until golden and cooked through, 4–5 minutes. Remove and set aside.
3. In a separate pot, cook rotini pasta in salted water until al dente. Drain, reserving 1/2 cup pasta water.
4. In the chicken skillet, melt remaining butter over medium heat. Add garlic and sauté 30 seconds.
5. Stir in heavy cream and simmer 3–4 minutes until slightly thickened.
6. Add Parmesan cheese, parsley, salt, pepper, and optional extra Cajun seasoning. Stir until smooth.
7. Toss pasta with sauce, adding pasta water if needed for consistency.
8. Top with seared chicken, garnish with parsley, and serve hot with lemon wedges.
Notes
Don’t overcook the chicken; remove it from the heat once it’s golden and cooked through.
Freshly grated Parmesan melts smoother and gives a better flavor than pre-shredded.
Reserve pasta water to thin the sauce if it becomes too thick.
