2 tablespoons lemon curd
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon honey
2 tablespoons whipped cream
2 thin lemon slices
1/2 teaspoon chia seeds for garnish
Instructions
1. In a medium bowl, whisk together the chia seeds, almond milk, maple syrup, vanilla extract, and salt until fully combined.
2. Let the mixture sit for 5 to 10 minutes, then whisk again to break up any clumps.
3. Cover and refrigerate for at least 3 hours or overnight until the pudding is thick and set.
4. In a separate bowl, stir together the Greek yogurt, lemon curd, fresh lemon juice, lemon zest, and honey until smooth and creamy.
5. Spoon the chilled chia pudding into serving glasses or jars.
6. Add the lemon cream mixture on top of each serving and smooth the surface.
7. Finish with whipped cream, lemon slices, and a light sprinkle of chia seeds.
8. Serve chilled.
Notes
Stir the chia mixture twice before chilling so the seeds stay evenly distributed.
For a richer texture, use canned light coconut milk in place of almond milk.
