2 tbsp butter

2 tbsp flour

1 cup milk

1 cup shredded sharp cheddar

0.5 cup Velveeta or processed cheese, cubed

0.5 tsp chili powder

Salt to taste

8 small flour tortillas

1 cup shredded cheddar (for topping)

Chopped cilantro, diced tomatoes, and sour cream for garnish


Instructions

1. In a skillet, cook ground beef and onion until browned. Stir in garlic, cumin, paprika, chili powder, salt, and pepper. Cook 1-2 more minutes, then remove from heat.

2. For the cheese sauce: melt butter in a saucepan, whisk in flour, cook for 1 minute. Slowly add milk while whisking. Once thickened, stir in cheddar, Velveeta, chili powder, and salt. Stir until smooth.

3. Preheat oven to 375°F (190°C). Spoon beef into tortillas, roll, and place seam-side down in a greased 9×13 baking dish.

4. Pour cheese sauce over enchiladas, then top with extra shredded cheddar.

5. Bake uncovered for 20–25 minutes until bubbly and golden.

6. Garnish with cilantro, diced tomatoes, and sour cream. Serve hot.
