Description

Crispy on the outside, creamy on the inside, these Loaded Mashed Potato Bites are the perfect appetizer, snack, or side dish. Made with cheesy mashed potatoes, crispy bacon, and chives, they’re oven or air fryer ready, freezer-friendly, and ideal for any gathering.


Ingredients

1 ½ cups mashed potatoes

1 cup shredded cheddar cheese

4 slices cooked bacon, crumbled

1 large egg

3 tablespoons all-purpose flour

2 tablespoons chopped chives

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray or oil for baking


Instructions

1. Ensure mashed potatoes are cold and firm. Prepare all other ingredients.

2. In a large bowl, mix mashed potatoes, cheddar cheese, most of the crumbled bacon (save some for topping), chopped chives, egg, flour, salt, and pepper.

3. Stir until the mixture is fully combined.

4. Scoop and shape the mixture into 1 to 1.5-inch balls.

5. Place bites on a parchment-lined tray and chill for 30 minutes.

6. Preheat oven to 400°F (or air fryer to 375°F).

7. Grease a mini muffin tin or baking sheet and place the bites inside.

8. Spray the tops with cooking spray or lightly brush with oil.

9. Bake for 18–22 minutes or air fry for 10–12 minutes until golden and crispy.

10. Garnish with remaining bacon and fresh chives. Serve hot with dipping sauce.

Notes

Make sure your mashed potatoes are thick and not overly creamy—drier potatoes hold their shape best.

Chilling the bites before baking is key for getting that perfect crispy texture without falling apart.

For extra crispiness, use a mini muffin tin to help the bites keep shape and develop a golden crust on all sides.
