Ingredients

1/4 cup tahini (stirred well)

2 tablespoons Dijon mustard

2 tablespoons pure maple syrup

2 tablespoons apple cider vinegar (or lemon juice)

2 tablespoons water (plus more to thin if needed)

1/2 teaspoon garlic powder

1/4 teaspoon fine sea salt

Freshly ground black pepper, to taste


Instructions

1. In a medium bowl, combine tahini, Dijon mustard, and maple syrup. Whisk until smooth.

2. Add apple cider vinegar or lemon juice and mix well. The mixture will start to thicken.

3. Pour in water a tablespoon at a time while whisking until the dressing reaches your desired consistency.

4. Stir in garlic powder, salt, and black pepper. Taste and adjust seasoning as needed.

5. Use immediately or transfer to an airtight container and refrigerate for up to 7 days.

Notes

For a thinner texture, add more water a teaspoon at a time until pourable.

If your tahini is thick or separated, stir well or blend with a little warm water before using.

For extra zing, try lemon juice instead of apple cider vinegar.
