Description

This Mediterranean Baked Feta Appetizer is warm, creamy, and full of bold flavor. Roasted cherry tomatoes, olives, and fresh herbs come together with a rich block of feta cheese in a bubbling bath of olive oil. Serve it as an appetizer or part of a mezze spread.


Ingredients

1 block feta cheese (about 7 oz)

1 cup cherry tomatoes

1/3 cup Kalamata olives

2 cloves garlic, minced

3 tablespoons extra virgin olive oil

2 sprigs fresh thyme or oregano

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon cracked black pepper


Instructions

1. Preheat your oven to 400°F (200°C).

2. Place the feta block in a small baking dish.

3. Scatter cherry tomatoes and olives around the feta.

4. Tuck in fresh thyme or oregano sprigs.

5. Drizzle everything with olive oil.

6. Sprinkle minced garlic, red pepper flakes, and black pepper over the top.

7. Bake for 20 minutes, until feta is golden and tomatoes are blistered.

8. Let cool slightly and serve warm with bread or veggies.

Notes

Use block feta in brine for the creamiest texture.

Don’t skimp on the olive oil—it becomes a flavor-packed dip base.

Add sliced red onions or bell peppers for more veggie variety.
