Description

A colorful, nutritious dinner bowl featuring grilled spiced chicken, fresh vegetables, and creamy tzatziki over a bed of fluffy rice. This Mediterranean Chicken Bowl is easy to make and perfect for meal prep, bursting with balanced flavors and textures in every bite.


Ingredients

1 lb boneless skinless chicken thighs or breasts

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper to taste

1 cup uncooked white rice (or 3 cups cooked)

1 cup chopped cucumber

1 cup cherry tomatoes, halved

1/2 cup diced red onion

1/3 cup Kalamata olives

1/2 cup tzatziki sauce

Fresh dill for garnish (optional)


Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add sliced chicken and marinate for 30 minutes or overnight.
  2. Cook rice according to package instructions. Fluff and let cool slightly.
  3. Grill or sear chicken on medium-high heat for 5-7 minutes per side until charred and cooked through. Rest, then slice.
  4. Dice cucumber and red onion, halve cherry tomatoes.
  5. Assemble bowls: layer rice, arrange chicken, vegetables, and olives. Add a generous spoonful of tzatziki.
  6. Garnish with dill and a drizzle of olive oil if desired. Serve immediately.
