Ingredients
1 lb boneless skinless chicken thighs or breasts
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and pepper to taste
1 cup uncooked white rice (or 3 cups cooked)
1 cup chopped cucumber
1 cup cherry tomatoes, halved
1/2 cup diced red onion
1/3 cup Kalamata olives
1/2 cup tzatziki sauce
Fresh dill for garnish (optional)
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add sliced chicken and marinate for 30 minutes or overnight.
- Cook rice according to package instructions. Fluff and let cool slightly.
- Grill or sear chicken on medium-high heat for 5-7 minutes per side until charred and cooked through. Rest, then slice.
- Dice cucumber and red onion, halve cherry tomatoes.
- Assemble bowls: layer rice, arrange chicken, vegetables, and olives. Add a generous spoonful of tzatziki.
