Ingredients
2 boneless skinless chicken breasts
1 cup orzo pasta
2 cups broccoli florets
3 cloves garlic, minced
½ cup grated Parmesan cheese
2 cups chicken broth
½ cup heavy cream
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons fresh parsley, chopped
Salt and pepper, to taste
Instructions
1. Season chicken with salt, pepper, oregano, and paprika. Sear in olive oil over medium-high heat for 4-5 minutes per side until golden and cooked through. Set aside.
2. In the same pan, sauté minced garlic for 30 seconds. Add orzo and toast for 2 minutes.
3. Pour in chicken broth, simmer for 8-10 minutes, stirring occasionally until absorbed. Stir in heavy cream and Parmesan until creamy.
4. Add broccoli, cover, and steam for 3-4 minutes until tender. Nestle chicken back into the skillet.
5. Finish with lemon juice and parsley. Serve warm, garnished with extra Parmesan if desired.
Notes
Use chicken thighs if you prefer darker meat.
Swap in Greek yogurt for a lighter cream sauce.
