Description

Creamy, vibrant, and full of Mediterranean flavors, this one-skillet chicken orzo recipe is a cozy, comforting meal that’s both hearty and fresh. Tender chicken, al dente orzo, and broccoli come together in a garlic cream sauce with lemon and Parmesan to create a dish that’s perfect for weeknights or special dinners.

Ingredients

2 boneless skinless chicken breasts

1 tablespoon olive oil (plus extra if needed)

2 garlic cloves, minced

1 cup dry orzo pasta

2 cups chicken broth

1 cup broccoli florets

1/2 cup heavy cream

1/3 cup grated Parmesan cheese

1 tablespoon lemon juice

2 tablespoons chopped fresh parsley

Salt and black pepper to taste

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and let rest.
  3. In the same skillet, sauté garlic until fragrant (about 30 seconds).
  4. Add orzo and toast for 1 minute. Pour in chicken broth and simmer uncovered until orzo is al dente (8–10 minutes).
  5. Stir in broccoli and heavy cream. Simmer for 5 more minutes until broccoli is tender.
  6. Slice chicken and return it to the skillet. Add Parmesan and lemon juice. Stir to combine.
  7. Top with parsley and serve warm.
