Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil (plus extra if needed)
2 garlic cloves, minced
1 cup dry orzo pasta
2 cups chicken broth
1 cup broccoli florets
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and let rest.
- In the same skillet, sauté garlic until fragrant (about 30 seconds).
- Add orzo and toast for 1 minute. Pour in chicken broth and simmer uncovered until orzo is al dente (8–10 minutes).
- Stir in broccoli and heavy cream. Simmer for 5 more minutes until broccoli is tender.
- Slice chicken and return it to the skillet. Add Parmesan and lemon juice. Stir to combine.
- Top with parsley and serve warm.
