Description

A creamy, cheesy, Tex-Mex inspired dish layered with shredded chicken, crunchy chips, bold seasonings, and topped with melty cheddar. This easy casserole is perfect for family dinners or comforting leftovers.


Ingredients

Shredded chicken

Cream cheese

Sour cream

Rotel (diced tomatoes & green chilies)

Shredded cheddar cheese

Tortilla chips or Doritos

Taco seasoning

Diced bell peppers

Diced onions

Fresh cilantro and chopped tomatoes (for garnish)


Instructions

  1. Prepare the Chicken Base: Cook and shred chicken. Lightly season with salt and pepper.
  2. Build the Creamy Sauce: In a bowl, mix softened cream cheese, sour cream, taco seasoning, and Rotel. Fold in shredded chicken.
  3. Add the Veggies: Sauté diced bell peppers and onions until soft, then mix into the chicken mixture.
  4. Layer the Crunch: In a greased 9×13-inch dish, layer crushed chips, half the chicken mixture, more chips, and repeat.
  5. Top and Bake: Sprinkle shredded cheddar over the top. Bake at 350°F for 25-30 minutes until bubbly.
  6. Garnish and Serve: Top with fresh tomatoes and cilantro. Let rest for 5 minutes before serving.
