Ingredients
1 cup pumpkin puree
1 cup Greek yogurt (full-fat or 2%)
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1/2 cup vegetable oil
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1/2 cup all-purpose flour (for crumb topping)
1/4 cup granulated sugar (for crumb topping)
1/2 teaspoon cinnamon (for crumb topping)
1/4 cup melted butter (for crumb topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
2. In a large bowl, whisk together pumpkin puree, Greek yogurt, brown sugar, granulated sugar, eggs, and vegetable oil until smooth.
3. In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
4. Fold dry ingredients into the wet mixture until just combined. Do not overmix.
5. In a small bowl, mix crumb topping ingredients with a fork until crumbly.
6. Pour batter into prepared pan and smooth the top. Sprinkle crumb topping evenly.
7. Bake for 30–35 minutes or until a toothpick comes out clean.
8. Let cool completely in the pan before slicing and serving.
Notes
For best texture, use full-fat Greek yogurt.
Chill before slicing for extra clean cuts.
