Description

These Oatmeal Raisin Cookie Bars are a cozy, chewy treat packed with cinnamon, brown sugar, and plump raisins, all topped with a light vanilla glaze. They’re perfect for snacking, gifting, or pairing with coffee or tea.


Ingredients

1/2 cup (1 stick) unsalted butter, softened

3/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 1/2 cups old-fashioned rolled oats

3/4 cup raisins

1/2 cup powdered sugar

12 tablespoons milk (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, beat butter and brown sugar until light and fluffy.
  3. Add egg and vanilla; mix until combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually stir dry ingredients into wet mixture.
  6. Fold in oats and raisins until evenly distributed.
  7. Spread dough evenly in prepared pan.
  8. Bake for 22–25 minutes or until golden and set.
  9. Let cool completely in pan.
  10. Mix powdered sugar with milk to make a glaze; drizzle over cooled bars.
  11. Slice into squares and enjoy!
