Ingredients
1/2 cup (1 stick) unsalted butter, softened
3/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups old-fashioned rolled oats
3/4 cup raisins
1/2 cup powdered sugar
1–2 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a large bowl, beat butter and brown sugar until light and fluffy.
- Add egg and vanilla; mix until combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually stir dry ingredients into wet mixture.
- Fold in oats and raisins until evenly distributed.
- Spread dough evenly in prepared pan.
- Bake for 22–25 minutes or until golden and set.
- Let cool completely in pan.
- Mix powdered sugar with milk to make a glaze; drizzle over cooled bars.
- Slice into squares and enjoy!
