Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 cup diced onion
2 cloves garlic minced
1 cup diced carrots
1 cup diced celery
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
2 cups cooked chicken shredded or diced
4 cups chicken broth
1 cup heavy cream
1 pound potato gnocchi
2 cups fresh spinach
Instructions
1. Heat olive oil and butter in a large pot over medium heat.
2. Add onion, garlic, carrots, and celery. Sauté for 4–5 minutes until softened.
3. Stir in Italian seasoning, salt, and pepper. Add the cooked chicken and combine well.
4. Pour in the chicken broth and bring to a gentle simmer.
5. Add heavy cream and let the soup simmer for 10 minutes to slightly thicken.
6. Add gnocchi and simmer for 3–5 minutes or until gnocchi float and are tender.
7. Stir in spinach and cook until wilted, about 1–2 minutes.
8. Taste and adjust seasoning if needed. Serve hot with bread or grated Parmesan.
Notes
Use rotisserie chicken for a quick and flavorful shortcut.
Add gnocchi only near the end to avoid overcooking and mushy texture.
For a thicker soup, whisk 1 tablespoon of cornstarch with water and stir in before gnocchi.
