One Pan Balsamic Chicken

Description

A savory-sweet one-skillet meal of seared chicken thighs glazed in rich balsamic sauce, caramelized onions, and burst cherry tomatoes. This easy, flavorful dish is perfect for busy weeknights yet elegant enough for guests.


Ingredients

6 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 large onion, thickly sliced

3 cloves garlic, minced

1/3 cup balsamic vinegar

1 tablespoon honey

1.5 cups cherry tomatoes

Salt and black pepper, to taste

Fresh basil, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper. Sear skin-side down for 5-6 minutes per side until golden. Remove and set aside.
  3. In the same pan, cook onions until golden and soft, about 5 minutes.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Pour in balsamic vinegar and honey. Simmer and scrape the pan to deglaze; let reduce slightly.
  6. Return chicken to the pan with cherry tomatoes. Spoon glaze over the top.
  7. Simmer uncovered for 10-15 minutes until chicken is cooked through and tomatoes are blistered.
  8. Garnish with fresh basil and serve warm.
