Description
A quick and flavorful skillet dinner with juicy steak bites and creamy, cheesy garlic butter noodles. Perfect for weeknights when you want comfort food with minimal cleanup.
Ingredients
450 g sirloin steak (or ribeye/strip), cut into cubes
3 tbsp butter, divided
3 cloves garlic, minced
240 ml heavy cream
60 g Parmesan cheese, grated
100 g mozzarella cheese, shredded
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
300 g rotini or rigatoni pasta
2 tbsp fresh parsley, chopped
Instructions
1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
2. Heat 1 tbsp butter in a skillet over medium-high heat. Sear steak cubes 2–3 minutes per side until browned. Remove and set aside.
3. Lower heat to medium. Add 1 tbsp butter and garlic. Cook 1 minute until fragrant. Stir in heavy cream and simmer gently.
4. Whisk in Parmesan and mozzarella until creamy. Add pasta water if sauce is too thick.
5. Toss cooked pasta in the sauce until coated. Return steak bites and warm through.
6. Garnish with parsley and extra pepper. Serve hot.
Notes
For extra flavor, let steak come to room temperature before searing.
Don’t overcrowd the pan when cooking steak bites—work in batches for the best crust.
Add a splash of reserved pasta water when reheating leftovers to keep the sauce silky.
