Description

A bold and comforting dinner made in one pan! This One-Pot Cheesy Taco Pasta Skillet brings together seasoned ground beef, tender rotini, diced tomatoes, and a rich cheesy sauce. Perfect for busy weeknights, this taco-pasta mashup is ready in under 30 minutes and delivers big flavor with minimal cleanup.


Ingredients

1 pound ground beef

8 ounces rotini pasta

1 packet taco seasoning

1 can (14.5 ounces) diced tomatoes with juices

1 cup shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced

3 cups beef broth

2 tablespoons chopped fresh cilantro (optional)


Instructions

1. In a large skillet over medium heat, cook the ground beef until browned. Add diced onion and garlic, sauté until fragrant. Drain excess fat if needed.

2. Add the taco seasoning and stir to coat the beef. Pour in the diced tomatoes with their juices. Let simmer for 2–3 minutes.

3. Stir in the rotini pasta and beef broth. Bring to a boil, then reduce to a simmer. Cover and cook for 12–15 minutes or until pasta is tender, stirring occasionally.

4. Turn off the heat and stir in the shredded cheddar cheese until fully melted and creamy.

5. Top with chopped cilantro if using and serve hot.

Notes

Use freshly shredded cheese from a block for the best melting texture.

You can swap ground beef with ground turkey or plant-based meat.

For a spicier version, add jalapeños or a splash of hot sauce.
