Description
A bold, creamy, one-pot dinner featuring Cajun-spiced chicken and silky linguine in a garlic mozzarella sauce. This restaurant-quality dish is perfect for easy weeknight meals or cozy weekend gatherings.
Ingredients
2 boneless skinless chicken breasts or thighs
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic minced
3 cups chicken broth
1 ½ cups heavy cream
12 ounces linguine pasta
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
1. Season both sides of the chicken with Cajun seasoning.
2. In a large pot, heat olive oil and 1 tablespoon of butter over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and set aside.
3. In the same pot, add the remaining tablespoon of butter and the minced garlic. Sauté for 1 minute until fragrant.
4. Pour in chicken broth and heavy cream. Stir to combine and bring to a simmer.
5. Add linguine pasta directly to the pot. Stir often and cook uncovered for about 10–12 minutes, or until pasta is al dente and sauce is slightly thickened.
6. Reduce heat to low. Stir in shredded mozzarella and Parmesan until melted and smooth.
7. Slice the cooked chicken and return it to the pot. Toss everything together to coat.
8. Garnish with chopped parsley and serve warm.
Notes
For extra heat, sprinkle in cayenne or crushed red pepper with the Cajun seasoning.
Stir pasta frequently to prevent sticking and ensure even cooking.
If the sauce thickens too much, add extra chicken broth to loosen before serving.
