Ingredients

2 chicken breasts, sliced thin

1 tablespoon olive oil

1 tablespoon butter

4 cloves garlic, minced

2 cups chicken broth

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

8 ounces penne pasta

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped parsley (optional)

¼ teaspoon red pepper flakes (optional)


Instructions

1. Heat olive oil and butter in a large skillet or Dutch oven over medium-high heat.

2. Add sliced chicken, season with salt, pepper, and Italian seasoning. Sear 3–4 minutes per side until golden brown. Remove and set aside.

3. In the same pot, add more butter if needed. Stir in minced garlic and cook for 30 seconds until fragrant.

4. Pour in chicken broth and bring to a simmer. Stir in heavy cream and bring to a gentle bubble.

5. Add uncooked penne pasta directly into the sauce. Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally.

6. Once pasta is tender and sauce thickened, stir in Parmesan cheese until melted.

7. Return chicken to the pot, allow to warm through for a couple of minutes.

8. Garnish with parsley and red pepper flakes if desired. Serve hot.

Notes

Use freshly grated Parmesan for the creamiest texture and best flavor.

Don’t overcook the pasta—stir often and test for doneness early.

Add a splash of cream when reheating to keep the sauce smooth.
