This Oven-Roasted Cajun Chicken and Garlic Potatoes with Parmesan is the ultimate one-pan meal. Packed with bold Cajun spice, tender chicken, roasted garlic potatoes, and a sprinkle of melty Parmesan, it’s quick to prep, full of flavor, and perfect for both weeknight dinners or meal prep.
Ingredients
1 ½ pounds chicken thighs or breast, boneless and skinless
1 ½ pounds baby red potatoes, quartered
3 tablespoons olive oil
4 garlic cloves, minced
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika (optional)
⅓ cup Parmesan cheese, freshly grated
2 tablespoons chopped parsley
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
2. Cut the chicken into 1-inch cubes and quarter the baby red potatoes.
3. In a large bowl, toss chicken and potatoes with olive oil, garlic, Cajun seasoning, smoked paprika (if using), salt, and pepper until evenly coated.
4. Spread the mixture in a single layer on the prepared baking sheet.
5. Roast for 25–30 minutes, flipping halfway through, until chicken is fully cooked and potatoes are golden.
6. Remove from the oven and sprinkle with freshly grated Parmesan. Let it melt slightly.
7. Garnish with chopped parsley and serve hot.
Notes
Use chicken thighs for more moisture, or breasts for a leaner option.
Spread everything in a single layer on the pan to avoid steaming.
For a crispy finish, broil the pan for the last 2–3 minutes of cooking.
