Description

Creamy Parmesan Spinach Rice with Spicy Garlic Chicken is a cozy and flavorful dinner that brings comfort and spice in every bite. It pairs creamy, cheesy rice with garlicky, spicy seared chicken for a well-balanced, satisfying meal that’s perfect for weeknights or meal prepping ahead.


Ingredients

2 large chicken breasts or thighs

1 teaspoon paprika

1/4 teaspoon cayenne pepper

1/2 teaspoon chili flakes

1 teaspoon garlic powder

1 tablespoon brown sugar

2 tablespoons olive oil

2 tablespoons butter

2 cloves garlic, minced

1 cup long grain rice or arborio

2 cups chicken broth

1/2 cup heavy cream or milk

1 cup fresh spinach or 1/2 cup frozen

1/2 cup grated parmesan cheese

Salt and pepper, to taste


Instructions

1. Slice chicken into even strips. In a bowl, mix paprika, cayenne, chili flakes, garlic powder, brown sugar, salt, and pepper. Coat chicken evenly.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden. Set aside.

3. In the same skillet, reduce heat and melt 1 tablespoon butter. Add minced garlic and cook 1 minute. Return chicken and toss in garlic butter. Turn off heat.

4. In another pan, melt 1 tablespoon butter and toast rice for 1 minute. Add chicken broth and simmer until rice is tender and liquid absorbed.

5. Stir in cream and parmesan until creamy. Fold in spinach until wilted. Season with salt and pepper.

6. Serve rice with garlic chicken on top. Drizzle with leftover glaze. Garnish with chili flakes or parsley if desired.

Notes

For extra creaminess, use arborio rice and stir often while cooking.

Adjust the spice level by reducing cayenne or chili flakes.

Use freshly grated parmesan for best melt and bold flavor.
