Peach Cobbler Egg Rolls are a crispy, golden twist on a Southern favorite. Packed with warm spiced peaches and rolled in cinnamon sugar, these handheld treats are finished with a sweet vanilla glaze. Perfect for parties, brunches, or cozy nights in.
Ingredients
1 ½ cups diced peaches (fresh, frozen, or canned in juice)
⅓ cup brown sugar
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
2 teaspoons cornstarch
8 egg roll wrappers
2 tablespoons unsalted butter, melted
½ cup granulated sugar
1 teaspoon ground cinnamon
½ cup powdered sugar (for glaze)
2 tablespoons milk (for glaze)
½ teaspoon vanilla extract (for glaze)
Oil for frying (vegetable or canola)
Instructions
1. In a medium saucepan over medium heat, combine diced peaches, brown sugar, cinnamon, nutmeg, and cornstarch. Stir frequently and cook until the mixture thickens. Set aside to cool slightly.
2. Lay out an egg roll wrapper in a diamond shape. Place 2 tablespoons of peach filling in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal.
3. Heat oil in a deep skillet or pot to 350°F (175°C). Fry egg rolls in batches, 2–3 minutes per side, until golden brown. Drain on paper towels.
4. In a shallow bowl, combine granulated sugar and cinnamon. Roll warm egg rolls in the cinnamon sugar until coated.
5. In a small bowl, whisk powdered sugar, milk, and vanilla extract until smooth. Drizzle over the egg rolls before serving.
Notes
To avoid soggy egg rolls, let the peach filling cool completely before assembling.
Seal egg rolls tightly with water to prevent leaking during frying.
For a lighter version, bake the egg rolls at 400°F for 15–18 minutes, brushing them with butter beforehand.
