Ingredients
¾ cup gluten-free cornmeal
¼ cup gluten-free all-purpose flour
1 ½ teaspoons baking powder
1 tablespoon sugar
½ teaspoon salt
½ cup finely chopped onion
1 large egg
½ cup milk or buttermilk
Oil for frying (vegetable or canola)
Instructions
1. In a medium bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
2. Stir in chopped onion, egg, and milk (or buttermilk) until a thick batter forms. Let sit for 5 minutes.
3. Heat about 2 inches of oil in a deep skillet or pot to 350°F (175°C).
4. Scoop and drop rounded tablespoons of batter into the hot oil. Fry 4–5 hushpuppies at a time.
5. Cook for 2–3 minutes per side, or until golden brown.
6. Remove and drain on paper towels. Serve warm.
Notes
Letting the batter rest before frying improves texture.
Use a thermometer for oil temperature — it’s key to crisp, not greasy, hushpuppies.
For a twist, mix in diced jalapeños or shredded cheese.
