Ingredients
2 cups crushed pineapple (with juice if canned)
1 cup granulated sugar
2 large eggs
1⁄4 cup all-purpose flour
1⁄2 cup unsalted butter, melted
1 teaspoon vanilla extract
1⁄4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C). Grease an 8×8 or 9×9-inch baking dish.
2. In a large mixing bowl, whisk together the eggs, sugar, and vanilla extract until smooth and light.
3. Fold in the crushed pineapple along with its juice.
4. Stir in flour and salt until just combined.
5. Add melted butter and mix until fully incorporated.
6. Pour the mixture into your prepared baking dish.
7. Bake for 45 to 55 minutes, until the top is golden brown and the center is just set.
8. Let cool for 10–15 minutes before serving for best texture.
Notes
Be sure to include the juice if using canned pineapple for maximum flavor and moisture.
Do not overmix the flour; gentle mixing keeps the texture soft and custardy.
This bake is very freezer-friendly—store in individual portions for easy reheating.
