Description
These Pineapple Chicken Kabobs are sweet, smoky, and bursting with tropical flavor. Juicy chunks of marinated chicken are paired with caramelized pineapple on skewers for the ultimate summer dinner or BBQ favorite. Easy to prep, grill, and devour!
Ingredients
1.5 lbs chicken breasts or thighs, cut into chunks
2 cups fresh pineapple chunks
1/4 cup soy sauce
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon sesame oil
1 tablespoon rice vinegar or lime juice
Skewers (wooden or metal)
Instructions
1. In a medium bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, and vinegar or lime juice.
2. Add chicken to a zip-top bag or dish and pour marinade over. Seal and refrigerate for at least 30 minutes or up to 4 hours.
3. Soak wooden skewers in water if using, during the marinade time.
4. Thread marinated chicken and pineapple chunks onto skewers, leaving slight space between pieces.
5. Preheat grill to medium-high heat. Lightly oil grates.
6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and pineapple is caramelized.
7. Rest for 5 minutes before serving. Garnish with parsley or green onions if desired.
Notes
For extra caramelization, brush kabobs with leftover marinade during the last minute of grilling.
Chicken thighs are juicier on the grill, but breasts give a leaner option—both work well.
If using canned pineapple, drain thoroughly and pat dry to help it char better.
