Description

Popcorn Salad is a fun, nostalgic, and surprisingly tasty side dish featuring a blend of fluffy popcorn, crisp vegetables, creamy dressing, and savory bacon. It adds an unexpected twist to any potluck, picnic, or cookout, merging textures and flavors in a totally unique way.


Ingredients

8 cups plain popcorn (air-popped or lightly salted)

1 cup sharp cheddar cheese, shredded or sliced

3/4 cup chopped celery

3/4 cup chopped cucumber

1/2 cup chopped green onions

6 slices bacon, cooked and crumbled

1/4 cup chopped fresh parsley

Dressing:

1/2 cup mayonnaise

1/4 cup sour cream

1 tbsp apple cider vinegar

1 tsp Dijon mustard

Salt and pepper to taste


Instructions

  1. Prepare 8 cups of popcorn and place in a large mixing bowl.
  2. Cook 6 slices of bacon until crispy, then drain and crumble.
  3. Chop celery, cucumber, green onions, and parsley; shred or slice the cheese.
  4. In a small bowl, mix mayonnaise, sour cream, vinegar, Dijon mustard, salt, and pepper.
  5. Add vegetables, cheese, and parsley to the popcorn and gently toss.
  6. Pour dressing over the salad and carefully mix until coated.
  7. Add crumbled bacon on top just before serving.
