Ingredients
2 pounds Russet or Yukon Gold potatoes, peeled and thinly sliced
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups whole milk or heavy cream
2 cups shredded sharp cheddar cheese (or a mix with Gruyère)
2 garlic cloves, minced
Salt and pepper to taste
Pinch of ground nutmeg (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes.
- Gradually whisk in milk or cream and bring to a simmer.
- Stir in cheese, garlic, salt, pepper, and nutmeg until smooth.
- Lightly grease a baking dish. Layer half of the potato slices in the dish.
- Pour half of the cheese sauce over the potatoes. Repeat with remaining potatoes and sauce.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake an additional 20-25 minutes, until the top is golden and bubbly.
- Let rest for 10 minutes before serving.
