Description
Pumpkin Spice Rice Krispie Treats are the perfect no-bake fall dessert. Soft, gooey, and filled with warm autumn spices, these chewy squares are topped with a sweet white chocolate drizzle for a cozy treat that’s easy to whip up in minutes.
Ingredients
6 cups Rice Krispies cereal
1 10-ounce bag mini marshmallows
4 tablespoons unsalted butter
1 ½ teaspoons pumpkin pie spice
1 teaspoon vanilla extract
⅓ cup white chocolate chips or melting wafers (optional)
Instructions
1. Lightly grease a 9×9 or 9×13-inch pan with butter or nonstick spray and line with parchment paper.
2. In a large saucepan over medium-low heat, melt the butter completely.
3. Add the mini marshmallows and stir until fully melted and smooth.
4. Remove from heat and stir in the pumpkin pie spice and vanilla extract.
5. Add the Rice Krispies cereal and gently fold until fully coated.
6. Press the mixture evenly into the prepared pan using a greased spatula or hands.
7. Melt the white chocolate in the microwave in 20-second bursts until smooth.
8. Drizzle the white chocolate over the top of the treats.
9. Let cool for 30 minutes at room temperature.
10. Lift out with parchment and cut into squares.
Notes
Use fresh marshmallows for best meltability and texture.
Don’t press the mixture too firmly into the pan—this keeps the bars soft and chewy.
The white chocolate drizzle adds flavor and a finished look, but can be omitted or replaced with milk or dark chocolate.
