Ingredients
1.5 pounds boneless skinless chicken thighs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano or Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Instructions
1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper or grease a baking dish.
2. In a large bowl, add the chicken thighs and drizzle with olive oil.
3. Sprinkle garlic powder, onion powder, paprika, oregano or Italian seasoning, salt, pepper, and optional red pepper flakes over the chicken. Toss or rub to evenly coat.
4. Arrange the chicken thighs in a single layer, smooth side up, on the baking sheet or dish.
5. Bake for 25–30 minutes, until internal temperature reaches 165°F (74°C).
6. For extra golden tops, broil for 2–3 minutes at the end.
7. Let the chicken rest for 5 minutes before serving.
Notes
For even cooking, pound thicker thighs slightly so all pieces are a similar thickness.
Don’t skip the rest time after baking—it helps retain juices.
