Ingredients
1 lb ground turkey
1/3 cup breadcrumbs
1 large egg
3 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
2 tbsp fresh dill, chopped
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
2 cloves garlic, minced
1 tbsp lemon juice
1 tbsp fresh dill, chopped
1/4 tsp salt
1/4 tsp black pepper
2 cups cooked white rice or quinoa
2 tbsp fresh dill for garnish
Instructions
1. In a large bowl, combine ground turkey, breadcrumbs, egg, garlic, parsley, dill, oregano, salt, and pepper, mixing gently until just combined.
2. Shape the mixture into evenly sized meatballs, about 1 to 1.5 inches wide.
3. Heat olive oil in a skillet over medium heat and cook the meatballs for 8–10 minutes, turning occasionally until golden brown and fully cooked.
4. In a separate bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper until smooth to create the tzatziki sauce.
5. Serve meatballs over rice or quinoa, topped with tzatziki and garnished with fresh dill.
Notes
Do not overmix the meat mixture to keep the meatballs tender and juicy.
Squeeze as much water as possible from the cucumber to prevent watery tzatziki.
Cook meatballs in batches to ensure even browning and proper cooking.
