Ingredients

1 lb ground turkey (93% lean)

1/2 cup old-fashioned oats

1 egg

1/4 cup finely diced onion

1/4 cup finely diced bell pepper (optional)

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup ketchup

3/4 cup shredded mozzarella or cheddar cheese

Chopped parsley (optional garnish)


Instructions

1. Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.

2. In a large bowl, mix ground turkey, oats, egg, onion, bell pepper, ketchup, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper until just combined.

3. Divide the mixture evenly into the muffin cups, filling each about ¾ full. Flatten tops.

4. Spread a thin layer of ketchup over each muffin.

5. Bake for 20 minutes. Remove, top with shredded cheese, and bake for 5 more minutes until cheese melts.

6. Let cool 5 minutes. Garnish with parsley and serve warm.
