These Rainbow Candy Apples are a whimsical treat with a glossy, marbled shell of swirling colors. With a perfect candy crunch on the outside and juicy apple inside, they’re ideal for parties, pride celebrations, or simply adding fun to your dessert table.
Ingredients
6 Granny Smith apples
3 cups granulated sugar
1 cup light corn syrup
1 cup water
1 teaspoon white gel food coloring
Gel food coloring in red, orange, yellow, green, blue, and purple
1 teaspoon flavored extract (optional – cherry, vanilla, or cotton candy)
6 lollipop sticks or wooden skewers
Edible glitter or sparkles (optional)
Instructions
1. Wash and dry the apples thoroughly to remove any wax. Insert a lollipop stick firmly into the top center of each apple.
2. Line a tray with greased parchment paper. Set apples and food coloring nearby.
3. In a heavy saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves.
4. Once dissolved, stop stirring. Attach a candy thermometer and cook until the mixture reaches 300°F (hard crack stage), about 15–20 minutes.
5. Remove from heat. Stir in white gel food coloring to create an opaque base.
6. Swirl dabs of rainbow gel colors over the surface. Do not mix too much; leave the colors marbled.
7. Dip each apple into the candy mixture, rotating to catch color patterns. Let excess drip, then place on parchment.
8. Sprinkle edible glitter while candy is still tacky (optional).
9. Let cool completely at room temperature until hardened.
Notes
Make sure apples are completely dry or the candy coating won’t stick properly.
A candy thermometer is essential for achieving the perfect hard crack stage.
Work quickly after adding the color — the mixture sets fast!
