Description

Golden, flaky, and packed with savory corned beef, sauerkraut, and Swiss cheese, this Reuben Bake transforms the iconic sandwich into a hearty, crowd-pleasing meal. Wrapped in buttery puff pastry and served with creamy Thousand Island dressing, it’s perfect for gatherings or a cozy night in.


Ingredients

1 sheet puff pastry, thawed

1/2 pound sliced corned beef

1 cup sauerkraut, drained and squeezed dry

1 cup shredded Swiss cheese (or slices)

1/4 cup Thousand Island dressing (plus extra for dipping)

1 egg, beaten (for egg wash)

1 tablespoon chopped parsley or caraway seeds (optional)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface to a 10×14-inch rectangle and place on the baking sheet.
  3. Spread a thin layer of Thousand Island dressing down the center third.
  4. Layer corned beef, sauerkraut, and Swiss cheese over the dressing.
  5. Cut slits along both long sides of the pastry and braid strips over the filling.
  6. Tuck in the ends to seal, brush with beaten egg, and sprinkle with parsley or caraway seeds.
  7. Bake for 25–30 minutes or until golden brown.
  8. Let rest for 5 minutes before slicing. Serve with extra dressing.
