Ingredients
1.5 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons butter
1 yellow onion, finely chopped
3 garlic cloves, minced
8 oz cremini mushrooms, sliced
1 tablespoon flour
1 teaspoon Dijon mustard
1 cup chicken broth
1 cup heavy cream
Salt and pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Cut the chicken thighs into bite-sized pieces.
2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
3. Sear the chicken in batches until golden brown. Transfer to a plate and set aside.
4. In the same skillet, add the remaining butter and reduce heat to medium.
5. Sauté chopped onion until soft, then stir in garlic for 30 seconds.
6. Add mushrooms and cook until golden and most of the moisture has evaporated.
7. Sprinkle flour over mushrooms and cook for 1-2 minutes.
8. Stir in Dijon mustard, then slowly pour in chicken broth while stirring.
9. Simmer until slightly thickened.
10. Stir in heavy cream and return the chicken with juices to the skillet.
11. Simmer 5-7 minutes until the chicken is cooked through and the sauce is creamy.
12. Season with salt and pepper.
13. Garnish with parsley and serve over mashed potatoes, noodles, or rice.

Let the sauce simmer gently after adding cream to avoid curdling.
A splash of white wine can elevate the sauce if desired.
