Ingredients
2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
1 head garlic
2 tablespoons olive oil (for roasting garlic)
4 tablespoons unsalted butter
3/4 cup heavy cream, warmed
1 teaspoon salt (plus more for boiling water)
1/2 teaspoon freshly ground black pepper
Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 40 minutes. Let cool, then squeeze out the soft cloves.
- Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes. Drain well.
- Return potatoes to the pot. Add roasted garlic, butter, and warm cream. Mash until smooth and creamy. Season with salt and pepper.
- Transfer to a serving bowl, top with extra butter, parsley, and a sprinkle of black pepper. Serve warm.
