Description

These gooey, rich Sailor Jacks Spice Muffins are bite-sized molasses treats with a caramelized crust and pudding-like center. Baked in mini muffin tins, they’re spiced, nostalgic, and perfect for cozy snacking or sharing.


Ingredients

1/2 cup molasses

1/2 cup brown sugar

1/4 cup melted butter

1 large egg

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

3/4 cup all-purpose flour

1/4 cup hot water


Instructions

1. Preheat oven to 350°F (175°C) and grease a mini muffin tin generously.

2. In a bowl, whisk together molasses, brown sugar, and melted butter until glossy.

3. Beat in the egg until fully incorporated.

4. Stir in baking soda, cinnamon, ginger, and cloves until evenly mixed.

5. Add flour and mix to form a thick batter.

6. Slowly pour in hot water while stirring until the batter is smooth and pourable.

7. Spoon batter into muffin tin, filling each cavity nearly full.

8. Bake for 12 to 14 minutes until edges are set and centers are puffed but soft.

9. Let cool in pan for 10 minutes before removing. Serve warm or at room temp.

Notes

Grease the mini muffin tin well—paper liners won’t work for these sticky centers.

For a deeper flavor, use blackstrap molasses.

Let the muffins cool before removing to preserve their shape and texture.
