1/2 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
4 cups gluten free vegetable broth
1 cup unsweetened full fat coconut milk
1 tablespoon lime juice
2 tablespoons coconut cream, optional for garnish
2 tablespoons chopped parsley or cilantro, optional for garnish
1 tablespoon roasted pumpkin seeds, optional for garnish
1/4 teaspoon red pepper flakes, optional for garnish
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the diced onion and chopped carrots, then cook for 4 to 5 minutes until softened.
2. Stir in the minced garlic and cook for 30 seconds until fragrant.
3. Add the cubed sweet potatoes, ground ginger, smoked paprika, cumin, salt, and black pepper. Stir well to coat everything in the seasonings.
