Ingredients
1 pound breakfast sausage (pork or turkey), cooked and crumbled
8 ounces cream cheese, softened
6 large eggs
1/2 cup milk (whole or 2%)
3 cups frozen shredded hashbrowns, thawed
1 1/2 cups shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and black pepper to taste
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles. Drain excess grease.
3. While the sausage is still warm, stir in the softened cream cheese until fully melted and well combined.
4. In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
5. Spread the thawed hashbrowns evenly in the bottom of the prepared baking dish.
6. Spoon the sausage and cream cheese mixture over the hashbrowns.
7. Pour the egg mixture evenly over the top.
8. Sprinkle shredded cheddar cheese over everything.
9. Bake uncovered for 35–40 minutes, or until the center is set and the top is golden and bubbling.
10. Let cool for 5–10 minutes before slicing. Garnish with chopped parsley, if using.
Notes
To make ahead, assemble the casserole the night before, cover, and refrigerate. Bake fresh in the morning, adding 5–10 minutes to account for the chill.
Use fresh shredded potatoes if preferred—just be sure to pat them dry to avoid extra moisture in the dish.
Customize with veggies like sautéed mushrooms, peppers, or spinach for extra nutrition and color.
