Description

A hearty, protein-packed breakfast bowl layered with roasted sweet potatoes, sizzling sausage slices, creamy scrambled eggs, fresh avocado, and wilted greens. Perfect for a balanced, energizing start to your day.


Ingredients

2 medium sweet potatoes, peeled and cubed

1 tbsp olive oil

Salt & pepper to taste

1/2 tsp paprika

2 smoked sausages, sliced

4 large eggs

2 tbsp milk or cream

1 tbsp butter

2 cups kale or spinach, chopped

1 ripe avocado, sliced


Instructions

  1. Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika. Roast on a baking sheet for 25–30 minutes, flipping halfway through.
  2. Sear the Sausage: In a skillet over medium-high heat, cook sausage slices until browned and slightly crisp. Remove and set aside.
  3. Scramble the Eggs: Whisk eggs with milk or cream. Melt butter in a skillet over medium-low heat, add eggs, and cook gently until softly scrambled.
  4. Sauté the Greens: In the same pan, add a drizzle of olive oil. Cook kale or spinach until wilted, about 2–3 minutes. Season lightly.
  5. Assemble the Bowl: Layer roasted sweet potatoes, sausage, scrambled eggs, greens, and avocado slices in a bowl. Finish with cracked black pepper.
