Ingredients
500g ground beef
1 medium onion, chopped
2 garlic cloves, minced
2 medium carrots, diced
1 cup frozen peas
2 tablespoons tomato paste
1 cup beef stock
1 tablespoon Worcestershire sauce
1 teaspoon cornstarch (optional)
Salt and pepper, to taste
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Heat a drizzle of oil in a skillet over medium heat. Add chopped onion and sauté until soft and translucent, about 4 minutes. Stir in garlic and cook for 30 seconds until fragrant.
2. Add ground beef, breaking it up with a spoon. Cook until browned, about 6–8 minutes. Drain excess fat if needed.
3. Stir in carrots and peas. Add tomato paste and cook for 2 minutes, allowing the paste to caramelize slightly.
4. Pour in beef stock and Worcestershire sauce. Stir to combine. Simmer uncovered for 10–15 minutes until vegetables are tender and sauce is slightly reduced.
5. Optional: Mix cornstarch with cold water and stir into the skillet to thicken the sauce. Cook 2–3 more minutes.
6. Season with salt and pepper to taste. Garnish with parsley and serve warm.
Notes
For a vegetarian version, substitute ground beef with lentils or a plant-based meat alternative and use vegetable broth.
Add extra veggies like corn, mushrooms, or zucchini to stretch the recipe or use up what you have.
To freeze, let the mince cool fully before storing in an airtight container—freezes well up to 3 months.
