This Sicilian Meatloaf is a cozy twist on a classic—stuffed with mozzarella, fresh spinach, herbs, and smothered in marinara sauce. A blend of beef and Italian sausage gives it rich flavor while the cheesy center makes it truly special. Perfect for Sunday dinner or meal prepping for the week ahead.
Ingredients
1 pound ground beef
1 pound Italian sausage (sweet or spicy)
1 cup breadcrumbs
1 cup grated Parmesan cheese
2 large eggs
1 cup fresh spinach (lightly sautéed)
1 cup shredded or sliced mozzarella cheese
3 cloves garlic (minced)
1 small onion (finely chopped)
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 ½ teaspoons salt
1 teaspoon black pepper
1 ½ cups marinara sauce (plus more for serving)
1 tablespoon olive oil (for sautéing spinach)
Instructions
1. Lightly sauté fresh spinach in olive oil until just wilted. Let it cool.
2. In a large bowl, mix ground beef, Italian sausage, breadcrumbs, Parmesan, eggs, onion, garlic, basil, parsley, salt, and pepper. Combine gently without overmixing.
3. On parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.
4. Add spinach and mozzarella in an even layer down the center.
5. Roll it up tightly like a jelly roll, sealing the edges to keep the filling inside.
6. Transfer to a baking dish, seam-side down.
7. Spoon 1/2 cup marinara over the top.
8. Bake at 375°F (190°C) for 45–55 minutes or until internal temp reaches 160°F (71°C).
9. Let it rest for 10 minutes before slicing.
10. Serve with extra marinara and garnish with more Parmesan and basil.
Notes
Don’t skip the resting step—it helps the meatloaf set and slice cleanly.
For a low-carb option, swap out breadcrumbs for almond flour.
If your mozzarella is very wet, pat it dry before adding it to prevent sogginess.
