Description
These Simple Pecan Pie Bars are everything you love about classic pecan pie—but made easier, into handheld dessert bars. Featuring a buttery shortbread crust and a rich, gooey pecan filling, they’re perfect for holidays, bake sales, or a cozy dessert at home.
Ingredients
1 cup unsalted butter, melted
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup brown sugar (for crust)
3 large eggs
1 cup brown sugar (for filling)
1 cup light corn syrup
1/4 cup unsalted butter, melted (for filling)
1 teaspoon vanilla extract
1/2 teaspoon salt (for filling)
2 cups chopped pecans
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. In a medium bowl, mix 1 cup melted butter, 2 cups flour, 1/2 tsp salt, and 1/2 cup brown sugar. Press into the bottom of the pan.
3. Bake crust for 18–20 minutes or until lightly golden.
4. While crust bakes, whisk eggs, 1 cup brown sugar, corn syrup, 1/4 cup melted butter, vanilla, and 1/2 tsp salt in a bowl. Fold in chopped pecans.
5. Pour pecan filling over hot crust. Spread evenly.
6. Return to oven and bake for 30–35 minutes until the center is set and slightly puffed.
7. Cool completely in pan. Chill for 1 hour for cleaner slicing. Lift out and cut into bars.
Notes
Chill the bars before slicing to get clean, sharp edges.
You can toast the pecans beforehand for an even richer flavor.
Substitute maple syrup or honey if corn syrup isn’t available, though texture may vary.
