Ingredients
16 oz Velveeta cheese, cubed
1 lb ground beef
1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Tortilla chips for serving
Optional toppings: diced tomatoes, chopped cilantro, jalapeños
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
2. Return the skillet to heat and add garlic powder, onion powder, salt, and pepper. Stir to evenly coat the beef.
3. Lower the heat to medium-low. Add cubed Velveeta cheese and stir frequently until melted and smooth.
4. Stir in the Rotel tomatoes (with juices). Mix well and simmer until heated through.
5. Transfer to a serving dish or slow cooker set to warm. Top with any desired garnishes and serve with chips or dippers of choice.
Notes
To keep it warm during a party, transfer the dip to a mini slow cooker set on low or warm.
You can substitute ground turkey for a lighter version that’s just as satisfying.
For extra creaminess, add 4 oz of cream cheese along with the Velveeta.
