Description

A slow cooker twist on the beloved Southern shrimp boil, this version is packed with smoky sausage, sweet corn, tender potatoes, and juicy shrimp—all simmered to perfection with Old Bay and a buttery finish.


Ingredients

Red Potatoes

Corn on the Cob

Smoked Sausage (Andouille or kielbasa)

Large Raw Shrimp

Old Bay Seasoning

Garlic Cloves

Onion

Lemon

Water or Low-Sodium Chicken Broth

Butter

Fresh Parsley (optional for garnish)


Instructions

  1. Cut potatoes in half or quarters, chop corn into 2-3 inch pieces, and slice sausage into thick rounds. Place in slow cooker with chopped onion and garlic.
  2. Add Old Bay seasoning, squeeze lemon juice over contents, and drop the lemon halves in. Pour in 4 cups of water or broth.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until potatoes are fork-tender.
  4. Add shrimp and cook on HIGH for 20-30 minutes, until pink and opaque.
  5. Finish with melted butter and sprinkle with chopped parsley before serving. Add extra lemon wedges on the side.
