Ingredients
1 lb ground beef (80/20 blend)
4 slices sharp cheddar cheese
2 brioche buns
¼ cup pickled jalapeno slices
2 tablespoons mayonnaise
1 teaspoon sriracha
¼ teaspoon smoked paprika
1 tablespoon unsalted butter
1 tablespoon chopped fresh parsley or cilantro
Instructions
- Make the Spicy Mayo: Mix mayonnaise, sriracha, and smoked paprika in a small bowl. Set aside.
- Toast the Buns: Heat butter in a skillet and toast the brioche buns, cut-side down, until golden. Remove and keep warm.
- Form Patties: Divide the beef into 4 loose balls (about 4 oz each).
- Smash and Sear: On a hot skillet, place each beef ball and smash it flat with a spatula. Cook until edges are crisp and browned.
- Add Cheese: Top each patty with cheddar cheese. Cover for 30 seconds to melt.
