Ingredients

1 lb ground beef (80/20 blend)

4 slices sharp cheddar cheese

2 brioche buns

¼ cup pickled jalapeno slices

2 tablespoons mayonnaise

1 teaspoon sriracha

¼ teaspoon smoked paprika

1 tablespoon unsalted butter

1 tablespoon chopped fresh parsley or cilantro


Instructions

  1. Make the Spicy Mayo: Mix mayonnaise, sriracha, and smoked paprika in a small bowl. Set aside.
  2. Toast the Buns: Heat butter in a skillet and toast the brioche buns, cut-side down, until golden. Remove and keep warm.
  3. Form Patties: Divide the beef into 4 loose balls (about 4 oz each).
  4. Smash and Sear: On a hot skillet, place each beef ball and smash it flat with a spatula. Cook until edges are crisp and browned.
  5. Add Cheese: Top each patty with cheddar cheese. Cover for 30 seconds to melt.
  6. Assemble: Spread spicy mayo on bottom buns. Add patty, jalapeno slices, and fresh herbs. Cap with top bun.
