Description

Golden, crispy on the outside and irresistibly soft inside, Soft Cheesy Onion Bread layers buttery dough, gooey melted cheese, and sweet caramelized onions for the ultimate comfort bake. Perfect as a side, snack, or the star of brunch!


Ingredients

3 ½ cups all-purpose flour

2 ¼ teaspoons active dry yeast

1 cup warm milk

4 tablespoons melted butter

2 tablespoons sugar

1 teaspoon salt

1 ½ cups shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 ½ cups caramelized onions (from about 2 large onions)

1 large egg (plus 1 for egg wash)


Instructions

1. Combine warm milk, sugar, and yeast; let sit 5-10 min until frothy.

2. Add flour, salt, egg, melted butter; mix into soft dough; knead 8-10 min until smooth.

3. Place in oiled bowl, cover; let rise 1-1.5 hr until doubled.

4. Caramelize sliced onions in butter or oil over medium-low heat, stirring, 20-30 min.

5. Roll dough into rectangle; spread onions and cheeses on top.

6. Roll up dough like a jelly roll; place seam-side down in greased loaf pan or on baking sheet.

7. Cover; rise again 30-45 min until puffy.

8. Preheat oven to 350°F (175°C); brush with egg wash.

9. Bake 30-35 min until golden and sounds hollow when tapped.

10. Cool slightly before slicing.

Notes

Use fresh yeast and allow full rise time for the fluffiest result.

Mix cheese types (like Gruyère, fontina) for extra flavor depth.

Add herbs like rosemary or thyme for a fragrant twist.
