Description
A creamy, comforting pasta dish featuring spaghetti swirled in a luscious sun-dried tomato cream sauce with wilted spinach and a shower of grated parmesan. Easy to make and deeply satisfying.
Ingredients
8 oz spaghetti
1 tablespoon butter
2 cloves garlic, minced
1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
1 cup heavy cream
2 cups fresh spinach
1/2 cup grated parmesan cheese
Salt and black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a large skillet over medium heat, melt the butter. Add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in the heavy cream. Reduce heat to low and simmer for 3-5 minutes.
- Add spinach to the sauce and stir until wilted. Mix in the parmesan cheese until smooth.
- Add the cooked spaghetti to the skillet and toss gently. Add reserved pasta water as needed to loosen the sauce.
- Season with salt and pepper to taste. Serve warm with extra parmesan.
