Spaghetti and Spinach with Sun Dried Tomato Cream Sauce

Description

A creamy, comforting pasta dish featuring spaghetti swirled in a luscious sun-dried tomato cream sauce with wilted spinach and a shower of grated parmesan. Easy to make and deeply satisfying.


Ingredients

8 oz spaghetti

1 tablespoon butter

2 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)

1 cup heavy cream

2 cups fresh spinach

1/2 cup grated parmesan cheese

Salt and black pepper, to taste


Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet over medium heat, melt the butter. Add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  3. Pour in the heavy cream. Reduce heat to low and simmer for 3-5 minutes.
  4. Add spinach to the sauce and stir until wilted. Mix in the parmesan cheese until smooth.
  5. Add the cooked spaghetti to the skillet and toss gently. Add reserved pasta water as needed to loosen the sauce.
  6. Season with salt and pepper to taste. Serve warm with extra parmesan.
